1 3/4 cup organic multigrain pancake and waffle mix
1/2 cup unsweetened cocoa
1/4 cup organic sugar
1 1/2 cup vanilla-flavored organic almond milk
1 tablespoon oil
2 extra-large organic eggs
1 teaspoon organic vanilla extract
Mix together pancake and waffle mix, cocoa and sugar in a small bowl. Set aside.
Whisk together almond milk, oil, eggs and vanilla in a medium bowl. Stir in waffle mixture just until lumps disappear. Bake according to waffle iron instructions. Drizzle with Nondairy Chocolate Sauce (see recipe below).
