Dark and mysterious, this soft, beautiful mixture could be used as a base under tarts and custard desserts. Or spoon it right out of the jar onto breakfast pancakes or after-theater crepes. The apples and orange peels add pectin, shortening the time the conserve takes to set. Still, it will take about a half hour.
Recipe Ingredient Details:
3 cups natural cane sugar
1 1/2 cups water or unsweetened apple juice
1 tablespoon fresh lemon juice
1 apple, shredded (such as McIntosh, Pippin, Lodi, Rome Beauty)
1 orange, quartered, seeded, and chopped (peel on)
1/2 cup golden, seedless raisins, coarsely chopped
3 cups blackberries (about 12 ounces)
Heat four 1-cup jars and lids.
In a large pot, combine sugar, water or apple juice, and lemon juice. Bring to a boil over high heat, stirring to dissolve sugar. Add apple, orange, and raisins. Reduce heat and boil gently for 7 minutes.
Add blackberries, increase heat to high, and return to a boil. Boil hard, stirring constantly for 15–20 minutes, until mixture thickens. Remove from heat and test for set.
Skim and discard any foam. Fill hot jars, leaving 1/4-inch headspace. Top with lids. Process jars at a full rolling boil for 15 minutes.
