Made with Bakery On Main gluten-free instant oatmeal, this easy treat is delicious with dairy-free ice cream or yogurt.
Recipe Ingredient Details:
1⁄2 teaspoon almond extract
5 packets Bakery on Main Maple Multigrain Muffin Instant Oatmeal
1/3 cup almond meal
1 cup cold butter, cut into cubes
4 large red apples, diced
1 cup dried cherries
11⁄2 cups dairy-free ice cream or yogurt, for serving
Preheat oven to 375 ̊. Coat a baking dish with nonstick cooking spray.
In a large bowl, combine almond extract, oatmeal, and almond meal. Using hands, add butter to oat mixture and mix well; mixture will clump together. Add apples and dried cherries; mix well.
Transfer mixture to prepared baking dish. Bake for 40 minutes; remove from oven and set aside to cool for 10 minutes.
Serve warm with dairy-free ice cream or yogurt, if desired.
