3 tablespoons chopped mixed fresh herbs, such as parsley, rosemary, and chives

2 teaspoons finely chopped fresh garlic

Juice and finely grated zest of 1 large lemon

1 tablespoon grainy Dijon mustard (optional)

2/3 cup fruity extra-virgin olive oil

Mix all ingredients together.
