Mediterranean Bundles Makes 8 sandwiches
Nothing inspires thoughts of the Mediterranean quite like hummus and feta cheese. Combine the two for a protein-packed, fiber-filled lunch in a snap.
Prep Time: 10 minutes
1 package hummus mix
2 tablespoons sundried tomato paste (optional)
1/4 teaspoon cayenne pepper (optional)
1 cup sliced cucumbers
8 pita pockets
4 roasted red bell peppers (bottled), cut into 16 strips
2 cups chopped Roma tomatoes
1 cup crumbled feta cheese
Yogurt and Tahini Dressing (optional: For recipe, see Piquant Tabouleh Pockets)
1. Prepare hummus as directed on package. Mix in sundried tomato paste or cayenne pepper if desired. Toss cucumbers with lemon juice and salt to taste.
2. Spread pita with about 1/2 cup hummus. Layer with two slices of bell pepper and top with tomatoes, cucumbers, feta cheese and Yogurt and Tahini Dressing if desired. Wrap tightly.
