A lovely and simple showcase salad featuring winter fruits.
Prep tip: If you need to save time, use bottled or canned grapefruit sections.
4 ruby grapefruit
4 sweet, medium apples, such as Honey Crisp or Gala
2 star fruit (carambola)
1 tablespoon grated fresh ginger
1 tablespoon finely chopped fresh mint
1. Cut away grapefruit peel and white pith. Holding grapefruit over a serving bowl to catch juice, cut sections from membranes; squeeze membranes to extract all juice. 2. Core apples and slice into thin wedges; toss immediately with grapefruit and juice. Cut star fruit crosswise into 1/4-inch slices and add to bowl. In a small bowl, mix ginger with mint; toss gently with fruit. Chill until serving time.
