Savory Buckwheat Burgers
Makes 6 Burgers
Whole buckwheat is available roasted to a deep mahogany color or unroasted with a pale greenish-white hue. Roasted buckwheat (also called kasha) has a strong, almost scorched flavor.
1 3/4 cups cooked buckwheat
1 cup black beans, rinsed and drained
1 egg, beaten
2 tablespoons chopped fresh cilantro
1/2 chopped green onions or scallions
3/4 tablespoon gluten-free tamari
Salt and freshly ground black pepper to taste
1. Mix all ingredients except oil in a large bowl. Pulse briefly in a food processor to combine (don't puree). With damp hands, form mixture 6 patties.
2. In a wide skillet over medium-high heat, generously coat with oil; when hot, pan-fry patties for 5 minutes or until browned on one side. Flip patties and cook the other side for 3 minutes or until browned. Serve hot.
