Piquant Tabouleh Pockets Makes 6 pockets
You can easily spice up instant tabouleh by adding a few fresh ingredients. Tabouleh stores exceptionally well. Keep a batch on hand and toss together a pita sandwich in the morning dressed with Yogurt and Tahini Dressing.
Prep Time: 10 minutes
1 package instant tabouleh
1/3 cup finely chopped mint
1/4 cup finely chopped parsley
1/4 cup finely chopped scallions
1/4 cup lemon juice (as desired)
2 cups sliced Roma tomatoes
1 1/2 cups diced cucumbers
Yogurt and Tahini Dressing:
2 cups nonfat plain yogurt
3 tablespoons tahini (sesame seed paste)
2 teaspoons Asian chile sauce
1 teaspoon minced garlic
1. Prepare tabouleh according to directions on package. Add mint, parsley, scallions, lemon juice and salt as desired. Refrigerate.
2. For the Yogurt and Tahini Dressing, thoroughly combine yogurt, tahini, chile sauce and garlic. Refrigerate until ready to use.
3. Toss cucumbers with lemon juice and salt to taste. Refrigerate with tomatoes.
4. Fill pita pockets with tabouleh and top with yogurt sauce, tomatoes and cucumbers. Wrap tightly.
