Mashed Squash with Apples
and Caramelized Onions Serves 6 as a side dish
Smoked chicken or smoked tofu are perfect complements to this dish.
Prep Time: 15 minutes
Cooking Time: 30 minutes
2 tablespoons unsalted butter
1 medium onion, thinly sliced
1 medium apple, peeled, cored and thinly sliced
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
3 cups mashed, cooked winter squash (includes delicata, butternut and any squash in the hokkaido family)
3 tablespoons maple syrup
3-5 tablespoons plain yogurt
Salt and freshly ground black pepper to taste
1. In a heavy 2-quart saucepan, over medium heat, warm butter and cook onions and apples until soft.
2. Add cloves and cinnamon and stir for 1 to 2 minutes. Add squash, maple syrup and yogurt. Season with salt and pepper and blend thoroughly.
