Was there a mistake in Alison's Gluten-Free Baking Mix (“Gluten-Free Party Foods,” October 2008)? Does arrowroot powder actually exist? I can't find it anywhere.

Where's the fructose?

Why don't we hear more about fructose as an alternative to sugar? I hear that it has a lower glycemic index than cane sugar.

It's true that fructose has a lower glycemic index than sucrose (cane sugar). However, numerous studies show that consuming fructose in large amounts — especially in the form of high-fructose corn syrup — prevents insulin from working effectively, which can contribute to weight gain.
