Heat 2 to 4 tablespoons canola oil in a heavy sauté pan. When oil is hot, add chickpeas (1 can garbanzos, thoroughly rinsed and drained) in large slotted spoonfuls, frying until they turn nut-brown.
Remove to paper towels, blot excess oil, and immediately dust with a natural, low-sodium, all-purpose seasoning. Serve warm.
