Beefed-Up Meatloaf

Serves 6

Meatloaf
1 pound organic ground buffalo or beef, extra lean
1/3 cup fat-free evaporated milk
3/4 cup rolled oats
1 egg, omega-3-enhanced, gently beaten
1/4 yellow onion, minced (about 1/4 cup)
1/2 teaspoon garlic powder, or to taste
1/2 teaspoon chili powder, or to taste
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Sauce
3/4 cup organic ketchup
1 tablespoon brown sugar
3/4 teaspoon Worcestershire sauce
1/4 yellow onion, minced (about 1/4 cup)
1/4 teaspoon garlic powder, or to taste
1/4 teaspoon chili powder, or to taste


1. Preheat oven to 350°. Mix all meatloaf ingredients together, blending with your hands. Form into a loaf and place in a 9x4-inch loaf pan.
2. Mix all sauce ingredients together and pour over meatloaf. Bake for about 1 hour, or until cooked through.
