6 healthy, money-saving meals

Stretch your food dollars without sacrificing taste

What is in this article?:

These six healthy recipes all cost less than two dollars per serving.

Trying to stretch your food dollars? Who isn’t? It’s easier than you think: Cooking at home using seasonal, fresh foods is the number-one secret to healthy eating and saving money. When you use items like beans, potatoes, whole grains, leafy greens, and seasonal produce—always the most economical foods in the store—food not only tastes good but stretches to feed more people. When you choose protein, select choices that reduce cost without sacrificing taste: cottage cheese, eggs, and beans (again), plus lower-food-chain fish and economical poultry or beef. Small changes like these will go a long way toward making family wellness a priority—and keeping money in your wallet.

I did the math and there is no way that these ingredients cost as little as stated.
For example, all the ingredients in the beef recipe are supposed to cost 8.46. I pay almost that much for a pound of grass fed beef. I think this is a great article for eating cheap, but a bit misleading.

Thanks for writing. Just to be sure we're on the same page: These amounts are price per serving -- not the amount you'd spend to buy all of the ingredients. Our writer provided the amounts she spent on these dishes and then divided those amounts by the number of serving; but prices will certainly vary by region and even by season. (And to be honest, I'm not sure she included staples like ketchup.) Please feel free to send me a corrected amount and we can look at changing these to be more accurate!

Hi...the 12 Money Saving Produce Picks are certainly packed with nutrients but the prices of berries and avocadoes this season are exorbitant. Hopefully, as we get deeprer in the season the prices will come down some. Thanks for always providing great recipes.

Hello everyone, I hope you enjoy trying these recipes. I would love to get your feedback. Elisa, you are correct, I did not include condiment prices for these recipes, only the main ingredients. For the grass-fed beef, I buy it when it goes on sale and freeze it, otherwise, otherwise as the reader suggests it can cost as much as $8 a pound. For this recipe, I found it on sale for $4.99/pound at Sprouts. Earlier this month it was as low as $3.99/pound. Here is a great resource for store sales: http://www.survivingthestores.com/sprouts-farmers-market-3-99lb-grass-fe...
