How To Dry Fresh Herbs

To dry fresh herbs, hang upside down in bunches in a dry, somewhat cool location, or spread on a sheet of paper in warm, dry air away from direct sunlight. You can also dry them in the microwave: Rinse, then spread herbs on a paper towel and cover with another paper towel to absorb moisture. Microwave on high, 1–4 minutes. With both methods, herbs are dry when leaves crumble between your fingers. Strip leaves or chop herbs, and pack into clean, dry, airtight jars. Store in a cool, dark location. Fresh herbs dried this way will last 1 1/4–2 years.
