Kids create winning healthy recipes for White House lunch

The first Kids’ State Dinner was held yesterday at the White House, featured winning healthy recipes from kids all over the country. (Get the cookbook!)

File this under “smart ideas:” Food website partnered with the Let’s Move! campaign to sponsor a kids’ recipe contest for “healthy, delicious, and affordable, and—of course—tasty” lunch food.

From more than 1,100 original entries, the judges chose one recipe from each U.S. state and territory. Winners got a trip to Washington and were guests at the first-ever Kids’ State Dinner (actually Luncheon), held yesterday at the White House with Michelle Obama.

The menu included some of the winning recipes, including kale chips and a quinoa, corn, and black bean salad. (I’m particularly impressed by how many of the kids’ recipes use quinoa!)

The winning recipes are also available in a free PDF cookbook. Personally, I want to try the Secret Service Super Salad with spinach and strawberries (Michael Lakind, age 9, Texas), Vegan Sloppy Joes (Alexea Wagner, age 9, Nevada), and Rainbow Salad with Black Beans, Mint, and Lemon (Aidan Gould, age 12, Colorado).

What a fun way to get kids involved in changing the way they, and America, eats!
