Beyond the Heart of an Artichoke

In recent animal studies, artichoke (Cynara Scholymus) leaves have proven to be beneficial for the liver. Supplementation with artichoke prevented a liver toxin from causing oxidation, in turn preventing glutathione destruction. The active compounds appear to be cynarin and chlorogenic acid.
